Marking the cheese

The cheese-maker must log the fabrication date, the cheese dairy number and the vat number. In order to print the word “Canada” 48 times, he uses the template, puts it on the table, imbibes the template with ink and rolls the wheel on the plate. Since 1890, the Perron cheese dairy is identified by the code 1770 on the wheels.
