In the anteroom
Certainly, this is the most multifunctional room of the entire factory. It is used as an office and as a boutique for selling the products such as salt, ice, butter and rarely the cheese. The place is usually dry. Here, we bring the cheese wheels freshly pressed for drying, and we store the salt reserve and the barrels of rennet. It is also here that we keep and prepare the cheesecloth that will line the moulds. The family children have the task of cutting the pieces of cheesecloth.
At the the right of the staircase going to the cheese-maker family apartment, you find a very important room: the ice box.
