A rare heritage

This building was in operation until 1967. It was recognized as a “heritage structure” in 1989 by the Québec Government. It is the last witness of the artisanal cheese factories. It is also here in Saint-Prime that five generations of the Perron family have passed on the fabrication secrets of one of the best cheddar in Canada and in England.
