Smoothing the wheels
The cheese is removed from the moulds after about two hours of pressing. The cheesecloth is then smoothed to remove wrinkles; that’s the cleaning process. The cheese-maker then puts a cap of cheesecloth, called a cheese cap, on top and underneath the wheels. Then he puts the wheels back into the press until the next morning.
Do you see the equipment and containers on the cabinet counter? It seems that the work of a cheese-maker is like the work of biochemist.
